Soft Egg-Free Oatmeal Cookies




I find the cookies outside too sweet. As a result, we usually don't eat cookies. Also, a lot of them contain egg. These cookies are not only egg-free, but they are tasty too.
Ingredients:
  • 1 cup vegetable oil
  • Alternatively, use 1 cup softened butter.
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 bananas, mashed
  • 2 cups all purpose flour
  • 3 cups of oats
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 1 pinch nutmeg
  • Optional: 1 cup of semi-sweet chocolate chip, walnuts, blueberries, dried cranberries, etc. As long as what you add to the batter isn't more than 1 cup, it should be okay.

Yield: 3 dozen to 4 dozen cookies
Directions:
  1. In a mixing bowl, mash the bananas.
  2. Combine vegetable oil, sugar, vanilla extract with bananas.
  3. Cream mixture for 5-6 minutes. On my KitchenAid mixer, speed 4. 
  4. Mix oats into creamed mixture.
  5. Combine flour, baking soda, salt, cinnamon, and nutmeg.
  6. Mix dry ingredients into creamed mixture.
  7. Preheat oven to 375 F.
  8. Place parchment paper on cookie sheet.
  9. Roll dough into walnut sized balls and flatten.
  10. Bake for 10 minutes.
  11. Allow to cook on baking sheet for 5 minutes before transferring to a wire rack.
