Soft Egg-Free Oatmeal Cookies
I find the cookies outside too sweet. As a result, we usually don't eat cookies. Also, a lot of them contain egg. These cookies are not only egg-free, but they are tasty too.
Ingredients:
- 1 cup vegetable oil
- Alternatively, use 1 cup softened butter.
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 2 bananas, mashed
- 2 cups all purpose flour
- 3 cups of oats
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon cinnamon
- 1 pinch nutmeg
- Optional: 1 cup of semi-sweet chocolate chip, walnuts, blueberries, dried cranberries, etc. As long as what you add to the batter isn't more than 1 cup, it should be okay.
Yield: 3 dozen to 4 dozen cookies
Directions:
- In a mixing bowl, mash the bananas.
- Combine vegetable oil, sugar, vanilla extract with bananas.
- Cream mixture for 5-6 minutes. On my KitchenAid mixer, speed 4.
- Mix oats into creamed mixture.
- Combine flour, baking soda, salt, cinnamon, and nutmeg.
- Mix dry ingredients into creamed mixture.
- Preheat oven to 375 F.
- Place parchment paper on cookie sheet.
- Roll dough into walnut sized balls and flatten.
- Bake for 10 minutes.
- Allow to cook on baking sheet for 5 minutes before transferring to a wire rack.
