Egg-Free Cinnamon Buns
It's
a common theme around here. Egg free. Well, here's another egg free
recipe. This one is for cinnamon buns. My wife says these taste just as
good as the ones you can get outside. I guess this was a success. I
don't have icing in this recipe. If you want icing, you can find some
recipes for that and just add it onto this one.
Ingredients:

- 5 cup of all purpose flour
- 1/2 cup of white sugar
- 3 teaspoons of yeast
- 1 1/2 teaspoons of salt
- 1 ripened banana
- 1 1/4 cup of softened butter
- 1 cup of milk
Filling:
- 1/4 cup of butter
- 1/2 cup of brown sugar
- 1 1/2 tablespoons cinnamon
- 1 cup semi-sweet chocolate
Yield: 12 buns
Directions:
- Cut softened butter into cubes.
- Combine sugar, salt, yeast and flour.
- Combine butter and flour mixture by hand until pieces are the size of corn or sunflower seeds.
- Mash banana and combine with milk.
- Pour milk mixture into butter and flour mixture.
- Stir until just combined.
- Shape dough into rectangular shape, wrap in parchment paper, and store in the refrigerator for at least 4 hours (or overnight).
- Punch down dough. It likely doubled in size.
- Roll out dough and fold in to make it a rectangle of 12x17 inches and approximately 1/2 inch thick
- Preheat oven to 375°F
- Melt butter and chocolate.
- Add in brown sugar and cinnamon
- Spread the filling over the dough and cover it completely
- Start rolling the dough into a cylinder. The tighter the better.
- Cut the roll into twelve (or less) equal portions.
- Place the portions on a cookie sheet 1/4 inch apart.
- OPTIONAL: You can grease the cookie sheet with butter first. However, there's no need for it.
- Bake for 30 minutes.
- Remove from oven and wait 10-15 to cool before serving.
