Egg-Free Pancakes


I'm allergic to eggs. As a result, when I make pancakes, I don't use eggs. Nor do I use egg-replacements. They turn out well nonetheless. Why buy pancake mix from the store?
Ingredients:
  • 5/4 cup of all purpose flour
  • 2 tablespoons of white sugar
  • 1 teaspoon of salt
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of vanilla extract
  • 1 cup of water
  • 1 cup of milk

Yield: 10-12 pancakes
Directions:
  1. Combine flour, sugar, salt, and baking powder in mixing bowl.
  2. Add milk, water, and vanilla extract.
  3. Stir well until combined with the clumps of flour not visible
  4. Heat stove top with medium heat.
  5. In a non-skill skillet, use a spoon to scope mixture onto skillet.
  6. Cook until desired 'brown-ness'. Be careful not to burn pancakes.
  7. Flip occasionally.
  8. Serve hot.
  9. Optional: Cut a piece of butter and place on top of pancakes.
  10. Optional: Serve with maple syrup or table syrup.

I use brown sugar and jaggery instead of white sugar to make it more healthy. Martabak Manis is also such a dessert and cooked with lots of nuts and yummy syrups.
