Banana Oatmeal Cake
This cake recipe has no eggs or icing. Frankly, icing is too sweet. This cake is quite good on its own anyway. If you want to be healthier, substitute the all purpose flour with whole wheat flour. If you want a sweeter cake, use 1/2 cup of white sugar instead of 1/4 cup.
Ingredients:
- 2 cups of mashed bananas
- 1 cup rolled oats
- 1 1/3 cup all-purpose flour (176g)
- 1/4 cup of white sugar
- 2 tablespoons maple syrup
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 2/3 cup of yogurt (163g)
- 2/3 cup vegetable oil (160g)
- 1 teaspoon vanilla extract
- 2/3 cup dried cranberries
- 2/3 cup walnuts
Yield: 1 cake
Directions:
- Preheat oven to 350°F.
- In a mixing bowl, mix bananas, sugar, maple syrup, oil, yogurt and vanilla.
- In a separate bowl, mix flour, oats, baking soda, cinnamon, cloves, and baking powder.
- Stir in flour mixture until just combined.
- Stir in dried cranberries and walnuts.
- Spread batter into cake pan (we have a rectangular silicone baking mold)
- Bake for 30 minutes.
- Cool on wire rack.
