Banana Oat Muffins
A lot of muffins are pretty tough. I found this recipe for softer muffins.
Ingredients:
- 1 1/2 cups of all purpose flour (198g)
- 1 cup rolled oats
- 1/4 cup of white sugar (50g)
- 2 tablespoons maple syrup
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2-3 mashed bananas
- 3/4 cup of yogurt (184g)
- 1/3 cup vegetable oil (75g)
- 1/2 teaspoon vanilla extract
- 12 strawberries (fresh or frozen)
- 1/2 cup dried cranberries
- 1/2 cup walnuts
Yield: 12 muffins
Directions:
- Combine flour, oats, white sugar, baking powder, baking soda, and salt.
- In a mixing bowl, mix bananas, yogurt, oil and vanilla.
- Stir in flour mixture until just combined.
- Stir in dried cranberries and walnuts.
- Divide batter into 12-cup muffin tray.
- Insert 1 strawberry into batter of each tray.
- Preheat oven to 400°F.
- Bake muffins for 20 minutes.
- Cool on wire rack.
