Banana Oat Muffins



A lot of muffins are pretty tough. I found this recipe for softer muffins.

Ingredients:

  • 1 1/2 cups of all purpose flour (198g)
  • 1 cup rolled oats
  • 1/4 cup of white sugar (50g)
  • 2 tablespoons maple syrup
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2-3 mashed bananas
  • 3/4 cup of yogurt (184g)
  • 1/3 cup vegetable oil (75g)
  • 1/2 teaspoon vanilla extract
  • 12 strawberries (fresh or frozen)
  • 1/2 cup dried cranberries
  • 1/2 cup walnuts

 Yield: 12 muffins

Directions:

  1. Combine flour, oats, white sugar, baking powder, baking soda, and salt.
  2. In a mixing bowl, mix bananas, yogurt, oil and vanilla.
  3. Stir in flour mixture until just combined.
  4. Stir in dried cranberries and walnuts.
  5. Divide batter into 12-cup muffin tray.
  6. Insert 1 strawberry into batter of each tray.
  7. Preheat oven to 400°F.
  8. Bake muffins for 20 minutes.
  9. Cool on wire rack.
